My love for the carrot cake
The first carrot cake I tasted was a few years back in Laoag, Ilocos Norte. Back then the only type of cake I knew was chocolate flavored. After that experience I scouted for the best recipe of carrot. I looked at books and magazines to look for recipes of both the cake and the perfect cream cheese frosting to pair with it.
This is the recipe of the Pineapple Carrot Cake:
- 1 1/2 c butter
- 2 c white sugar
- 4 eggs
- 2tsp vanilla
- 3 1/2 c apf
- 1 tsp baking soda
- 2 tsp baking powder
- 2 c grated carrots
- 1/2 c cashew (peanuts, pecans or almonds)
- 1 tsp cinnamon
